Started with a tomato like this: And ended up becoming a grilled cheese sandwich with sharp cheddar, arugula and slices of perfectly juicy tomato. Reminded me of ordering grilled cheese with tomato freshman year at University of Oregon in the wee hours of the morning. I hadn’t had one in a long time. That was a mistake. They are sumptuous and amazing and literally impossible to stop eating once you’ve started. I make my grilled cheeses by slathering mayo on the outside of the bread to get a crispy finish. Side of garlic roasted broccoli and a goat cheese salad finished the meal. Simple and wonderful. Best thing I’ve made in a long time.
